Prosciutto and Pineapple Pizza

Growing up in Arizona I always had habits, phrases and memories that were quite different than those around me. With my dad from Canada and my mum from England, my sister and I were never entirely certain where our behaviour came from. *Note: I will never ever say Pencil Crayons, it will forever be coloured pencils. End of Story.

While others said pahsta, we said pasta. While my friends dished on vacationing in Mexico, we divulged the magic of living in and steering a canal boat through England. And when it was time for my birthday party, of course we would have Hawaiian pizza. Now as a 6 year old, hearing the word Hawaiian I thought yes I am finally doing something American. Yet when the pizza arrived, many kids and parents alike would say in disgust”Who puts pineapple on a pizza?”, and I can now say with confidence: Canadians.

I grew up with Hawaiian pizza, it was my za of choice. Unfortunately it seems to always get bullied and berated, but I don’t understand why. It is sweet and salty. Like the Kettle Corn of pizza world… wait, if you don’t like Hawaiian pizza do you also not like Kettle Corn?!?!

I digress. When I finally found out the ham and pineapple pizza was a Canadian thing, I became even more proud. Canadians have more to be known for then hockey and igloos and maple syrup (2 out of the 3 are accurate)! After finding out that this pizza was Canadian, I was even more excited to order it. Being in Arizona can make you feel verrrrrry far away from that beloved White North..or for me Very Wet Always Raining North. Having a piece of home made me feel connected to something that was my true culture.

Today being annoyingly lactose intolerant has limited by ability to order ham and pineapple pizza wherever I go. I guess my heart has thanked me. Lucky for me the world has created lactose free cheese, and it actually tastes just like cheese: REJOICE! Because I can’t walk up to any pizza counter, I often have to get my pizza kick at home.

I decided to slightly elevate my pizza game by using fresh pineapple and prosciutto, making the contrast between sweet and salty that much stronger. The slight catch is that I can’t walk up to my kitchen island and have a fresh slice of perfection appear in minutes. It does take a bit of work, but it is sure worth it. Once you make your own dough, your home made pizza will never be the same.

So for the love of Trudeau, please try at least one bite. If you don’t like it we will probably just say sorry a bunch of times.

PROSCIUTTO AND PINEAPPLE PIZZA

A completely made from scratch pizza

Ingredients
  • Dough
  • 2 tsp active dry yeast
  • 1 tbsp honey
  • 1 cup plus 5 tbsp lukewarm water
  • 1 1/2 cups all purpose flour
  • 1 1/2 cups OO flour
  • 1 tsp sea salt
  • Sauce
  • 2 tbsp olive oil
  • 1/2 cup onion, diced
  • 1 garlic clove, minced
  • 1 can (375 ml) tomato sauce
  • 1/4 cup tomato paste
  • 2 inch chunk of parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • S+P
  • Toppings
  • 1 cup fresh pineapple, sliced into chunks
  • 75 g thinly sliced prosciutto
  • 2 cups shredded mozzarella cheese
  • 1/3 cup goat cheese
  • fresh basil
Directions
  • Step 1 For Dough:In a large bowl, combine the yeast, honey, and water and stir well. Let the yeast activate and bubble, about 10 minutes.Add the flours, olive oil, and salt-stir with a wooden spoon until a mass of dough begins to form. Turn the dough out onto a floured surface. Knead for about 10 minutes, or until a soft dough ball forms.Transfer the dough to a lightly oiled bowl, oil the top of the dough and cover with plastic wrap. Place some where warm and let proof until it doubles in size (about 1 1/2 hours. Then chill in the fridge overnight.
  • Step 2 Next day let dough sit for 30 min to get to room temperature.
  • Step 3 Punch down the dough and transfer to a lightly floured surface. divide the dough into 4 equal portions and shape into balls.
  • Step 4 Roll the dough out with a rolling pin. Place on parchment paper and start building!
  • Step 5 For Sauce: In a large saucepan, heat the olive oil over medium heat. Stir in the onion and garlic and saute until softened. Add the remaining ingredients.Reduce temperature and simmer for 30 minutes.Grate in Parmesan cheese:
  • Step 6 Assemble!Place pizza stone (or baking tray) in oven and bring oven temp up to 450F. On rolled out dough, spread 2 spoonfuls of sauce leaving a few centimeters for the crust.Top with as much cheese, proscuitto and pineapple you like! I put a small layer of mozza, top with pineapple and proscuitto, and top with more mozza and goat cheese.
  • Step 7 Put pizzas in the oven for about 10-15 minutes or until browned.Place some basil leaves on top and serve!’
  • Step 8 NOTES: If you are feeling lazy, you can get pre-made dough and pizza sauce at the grocery store. If you are feeling extra lazy you can just use pre made pizza shells!
