RED ONION JAM

Ingredients
- 5 small red onions
- 1 1/2 tbsp olive oil
- 3 sprigs (tsp) of fresh thyme
- 2/3 cup brown sugar
- 3/4 cup red wine
- 1/4 cup balsamic vinegar
Directions
- Step 1 Slice red onions thinly and place in a large pot- add oil and cook over medium heat until onions become translucent.
- Step 2 Add sugar, thyme, balsamic vinegar, and wine. Simmer for about an hour, stirring occasionally.
- Step 3 Cool and refrigerate until needed.
