Butternut Squash Soup

I grew up in the land of cacti and sunshine 360 days of the year. Arizona was a beautiful place to live, if you didn’t mind sweating nearly every day. But that also meant that I didn’t really experience true season changes. The most exciting weather would be during monsoon season; it was still annoyingly hot but, hey there was lightening!

Because of our lack of actually cold weather, I never really got into the typical “fall” festivities. We spent our Octobers and Novembers thankful that it finally went below 32°C at night. However, I often yearned for those days where I could be stylish in jeans, boots, and a peacoat sitting on a bale of hay, drinking a PSL (pumpkin spice latte for those Starbucks illiterate).

Moving to Vancouver had its challenges-a desert girl living in one of the rainiest cities in Canada. But what I have loved the most dscn4432is seeing the vibrant green trees (with actual leaves!) slowly turning colours. The wind would send cascading bright yellows and oranges from towering maple trees on to the streets and cars below. Pocahontas got one thing right, you really can paint with all the colours of the wind.

Now although I have moved to a city that actually experiences fall, I have not caught on to the PSL bandwagon. Instead I prefer to have my calories in food form; my alternative is soup. I am not a huge fan of water pretending to be soup. We’ve all had it, that soup that you eat and two minutes later you want a big plate of literally anything. Butternut squash soup is a game changer. The squash provides heartiness and depth to soup, it is also super easy to make delicious flavour with minimal work. An extra bonus is that butternut squash is jam packed with Vitamin A.

Fun Fact: Although Vitamin A is often associated with promoting eye health, it also plays a vital role in protecting our immune system.

This means that not only is squash soup the perfect remedy on a autumn day, it may actually help us fight off that nasty cold.
